I am trying to change Templates, and when I click save, I get the following error:

You don't have permission to access /baker/admin/settings/save.php on this server.

I have run the php file "fix-permissions", but I think there are more to be changed (when I ran it initially, ALL of my permissions were wrong!).  I would have thought the installer would have taken care of directory permissions when they were created by the installer... no?

Which directories and what permissions do I need to save anything in the Settings Admin page?

Normally it works with chmod755  for all directorys

Permissions are always responsibility of the hostsystem, where your CMS runs on. These permissions can be preset in a way, that nobody has access to files created by the Webserver. That though should not be the issue here, since you uploaded the files via FTP.

You would most probably see more if you check the errorlogs of your webspace (if you have access to them).

For the other errors you have, you might want to try getting a webbased file manager and upload your CMS of choice with that, to avoid the issues you have with ownership. In my eyes worth a try.

I don't see where it has anything to do with the error message:
