Just browsing through my server folders to tidy up my server and I noticed there's quite a few files in my /temp folder - what is this for? Can I safely delete or empty this?

The /temp folder ist mainly for unzipping files - also some modules are using it. The files inside you can delete without worrying in 99%. The best would be just download the folder on your local PC just in case you notice some problem - but I don't think one's occuring.

By Definition the temp - folder is for temporarily files only and can be deleted at any time.
If it contains a subfolder 'cache' this will hold cached output from somewhere. If you delete it, it does not matter. The only can be is, that next run of the script needs a bit longer time to rebuild it.
If a module has problems with that rules, then it's a problem of that module which does not follow standards.
