To be clear: this is how I personally wanted it, to make it as simple and foolproof possible for my clients. Stefek first presented me a way more complex setup, with image selection and cropping function. I think you're more into that type of setup. Could be nice as well, so it's good to follow your own path. But for this particular client setup (and actually I think most typical business clients) I needed it be as simple as possible.

resulting in clients uploading 3000 x 2100 px files ...

Nah... file size is limited by PHP settings. Uploaded files will be resampled to the sizes that are in te module settings. So if you set thumbnails to be max 125px wide/heigh, uploaded pics will be resampled to that size automatically. So really resized, not visually compressed.

Clients uploading large files are a problem with any upload function, also with the Media section and image galleries. It has nothing to do with the way files are uploaded, but what happens with the uploads. Are they left as they are, then you have a problem. Are thye visually resized, you have a somewhat lesser problem, but still a problem. Are they resampled, the problem is gone, as far it concerns WB. Of course it is better that clients upload smaller files, so you may have to educate them how to simply make giant pics smaller for web use.

- I think there is a mod for the media with a resize on upload function ...

Then I think something went wrong with the update of the news module. Becasue it's a core module, changing it can be difficult. But I assure you it does resize here.

There is also an automatic resizer built in in the Media section of the Argos backend theme, but that only works with images uploaded there.
